  • 2 tsp (10 ml) olive oil
  • 1/2 red onion, sliced
  • Salt and pepper, to taste
  • 1/4 cup (15 g) cilantro, chopped, for garnish

Instructions

  1. Slow cook chicken breasts in barbecue sauce for 6-8 hours on low or 3-4 hours on high until tender and easily shreddable.
  2. Shred chicken using forks or mixer, then return to slow cooker. Season with salt and pepper, allowing meat to absorb sauce while cooling.
  3. Refrigerate shredded chicken for minimum 2 hours to enhance flavor and texture.
  4. Sauté sliced onions in olive oil over medium-high heat for 2-3 minutes until softened. Remove and set aside.
  5. In same skillet, cook bacon lardons over medium heat for 15 minutes until crispy.
  6. Combine shredded chicken with caramelized onions and crispy bacon.
  7. Preheat oven to 375°F and place silicone baking mat on rimmed baking sheet.
  8. Use an overturned glass as a guide to arrange crescent roll triangles in circular pattern, overlapping edges.

  10. Remove glass and fold crescent roll triangles over filling, tucking tips under bottom dough layer.
  11. Bake for 25-30 minutes until crust turns golden brown and thoroughly cooked.
