  • 1 tsp vanilla extract
  • 3/4 tsp cinnamon (optional)
  • 3 cups quick cooking oats
  • 2/3 cup pecans (chopped)
  • 14 oz (397 g) cream cheese (room temperature)
  • 1/2 cup unsalted butter (room temperature)
  • 1 1/2 cup powdered sugar
  • 2 tsps vanilla extract
  • 2 1/2 cups whipped cream (cool whip)
  • 2 1/23 cups whipped cream (cool whip)
  • caramel sauce for drizzling

Instructions

  1. Core, peel, and dice apples, immediately tossing with lemon juice to prevent browning.
  2. Combine sugars, cornstarch, cinnamon, and nutmeg in a saucepan. Whisk with water until fully dissolved, bringing to a rolling boil over medium-high heat.
  3. Reduce heat and simmer for 2 minutes, then add apples. Return to boil, then lower temperature and cook for 10-12 minutes until apples soften and sauce thickens.
  4. Remove from heat and allow apple mixture to cool completely to room temperature.
  5. Melt butter in a separate saucepan, stirring in brown sugar until fully incorporated.
  6. Add vanilla, cinnamon, and pecans to butter mixture, continuously stirring over medium heat.
  7. Fold in quick-cooking oats, cooking for 2 minutes until thoroughly combined.
  8. Set aside 1/2 cup of oat-pecan mixture. Press remaining mixture into a greased 9×13-inch dish, refrigerating until firm.
