Instructions
- In a food processor, blend flour, powdered sugar, and salt until uniformly mixed.
- Add cold cubed butter and pulse until the mixture looks like rough sandy crumbs.
- Incorporate egg yolk and cold water, processing until dough just begins to clump together, adding extra water if needed.
- Transfer dough onto a floured surface, shape into a compact disc, wrap in plastic, and chill in refrigerator for 30 minutes.
- Heat oven to 375F (190C). Roll out chilled dough to fit a 9-inch tart pan with removable bottom.
- Gently press dough into pan edges, trimming excess and creating small fork punctures across the base.
- Cover crust with parchment paper, fill with pie weights, and blind bake for 15 minutes.
- Remove weights and parchment, continue baking 5-7 minutes until golden. Allow crust to cool completely.
- Lower oven temperature to 325F (160C). Whisk sugar, flour, and eggs in a bowl until silky smooth.
- Mix in lemon juice, zest, and heavy cream until fully integrated.
- Pour lemon filling into cooled tart shell, spreading evenly.
- Bake 20-25 minutes until filling sets with a gentle center wobble.
- Cool to room temperature, then refrigerate minimum 2 hours.
- Before serving, dust with powdered sugar and decorate with fresh berries or edible flowers for romantic presentation.
